After putting away a plate of warm crostini misti, try one of the specialty homemade umbrichelli dishes, either tartufati (in light butter-and-truffle sauce with fresh truffle grated on top) or all'arrabbiata (if it isn't piccante enough for you, add peperoncini-spiked olive oil). You can cool your mouth afterward with a simple omelet stuffed with cheeses or order the divine filetto alla cardinale (beef filet cooked in cardinal-colored red wine).
