For more than 50 years, this fine restaurant has been the one to beat in Old Town, setting the standard by which the other seafood restaurants are judged. But you do have to be prepared to abandon restraint. The proprietors preserve the traditions established by their grandfather to devise a seafood feast for you, accompanied by the perfect wine from the cellar (which represents vineyards all over Greece). The fish is selected daily day down at the harbor -- the best of the catch -- and the proprietors have their own greenhouse on the outskirts of town to cultivate organic vegetables. Start with a bounteous seafood platter of delicately flavored sea urchins, fresh clams, and tender octopus carpaccio. Try the sargos, a sea-bream-type fish, charcoal-grilled to perfection. The creamy Greek yogurt with homemade green-walnut jam is a perfect ending for a superb culinary experience. Every meal here begins with a chef's consultation and should end with applause.
