This Relais & Châteaux is one of the top 10 restaurants in France. It attained that reputation in the 1950s and has since factored into the itineraries of globe-trotting foodies, visiting heads of state, and wealthy people touring the region. Come here with respect for the French grande bourgeoisie and the appeal of French culinary finesse. The place is too conservative and devoted to impeccably tailored service for anything radical or provocative.
Decorated in neutral colors and lined with contemporary artwork, the restaurant features superb cuisine at astronomical prices. Pierre (the father) and Michel (the son) Troisgros, the current keepers of the flame, celebrate the bounty of the Lyonnais countryside. Dishes include fried foie gras served with marinated eggplant, salmon with sage sauce, and beef served with Fleurie wine and bone marrow. For dessert, ask to see one of the best assortments of esoteric cheeses in the region, or perhaps enjoy a praline soufflé.
The hotel also rents 16 traditionally furnished rooms; a double costs 185€ to 540€ ($268-$783).
