One of Normandy's best-preserved 15th-century inns has flourished under four generations of the Dufour family since 1906. Dining rooms are decorated with copper pots, woodcarvings, and engravings. The food, reflecting local culinary traditions, is so outstanding that it's hard to single out specialties. The home-smoked salmon, canard (duckling) rouennais, chopped lamb, John Dory in cider sauce, and sole Normande are all exemplary. For dessert, try the Calvados-flavored soufflé or a slice of apple tart.
