Dining in the grande dame of Singapore achieves a level of sophistication unmatched by any other five-star restaurant. The architectural charm and historic significance of the old hotel will transform dinner into a cultural event, but don't just come here for the ambience; the food is outstanding as well. An ever-changing menu means that any dishes I recommend here might not be around by the time you make it, but I assure you, anything you order will still be divine. The degustation menu, seven courses at S$180 (US$115/£59), is the best way to explore their finest dishes if you have trouble choosing from an a la carte menu that features pigeon, lamb, suckling pig, veal, and a carving trolley of amazing cuts of beef prepared to perfection. The 400-label wine list (going back to 1890 vintages) could be a history lesson, and if you'd like you can request the cellar master to select a wine to match each course. The fabulously attentive service from the waitstaff will make you feel like you own the place. Formal dress is required.
