This is the most surprising restaurant on St. Barts, thanks to its artful simplicity and glamorous clients. The much-rebuilt Antillean house with almost no architectural charm attracts crowds of luminaries from the worlds of media, fashion, and entertainment. It's the kind of place you might find on Martinique, where its French Creole chef, Maya Beuzelin-Gurley, grew up. Maya stresses "clean, simple" food with few adornments other than a sprinkling of island herbs and lime juice. You might begin with the salad of tomatoes, arugula, and endive, and then follow with grilled fish in sauce chien (hot), or a grilled filet of beef. Maya also prepares what she calls "sailor's chicken," a marinated version made with fresh chives, lime juice, and hot peppers. Almost no cream is used in any dish, a fact that makes the place beloved by the fashion models and actors who hang out here. You'll find the place directly west of Gustavia, close to the island's densest collection of factories and warehouses. Views face west and south, ensuring glorious sunset watching.
