Having written a five-volume primer, owner/chef Francis Delage is considered the definitive authority on Creole cuisine. The decor evokes a rum shack -- there's even a boat wreck -- but this belies his sophisticated fare, which has lured the likes of Cameron Diaz and Steven Seagal. The restaurant has a prime perch overlooking Gustavia harbor. The menu offers such tempting dishes as spiny lobster and pumpkin bisque; coq au vin de Bourgogne; sea scallops and shrimp with crispy risotto and passionfruit sauce; and a traditional West Indian chicken Colombo curry with Creole sauce. The assiete Creole (spicy Caribbean platter) contains codfish fritters, conch gratin, marinated Bonito puff pastry of crab, and a feroce d'avocat (local avocado recipe and green salad).
