Isolated from the bulk of St. Barts's tourism, this restaurant lies midway up Morne Vitet, the island's highest mountain. The place has a French provincial decor, terraces accented with gingerbread, and food that the locals return for time and time again. Although the same menu is available throughout the day and evening, dinners are more formal than lunches, and might include escargot in garlic butter, crayfish grilled over charcoal and served with a garlic-flavored butter, filet of beef in pepper sauce, or magret of duckling with red berries and ginger. "Each dish takes time," says the owner, who believes in freshly preparing everything. Count on a leisurely meal and a well-informed host who has spent years studying astrology.
