Developed centuries ago to serve the needs of priests and pilgrims visiting temples, Buddhist vegetarian cuisine (shojin ryori) is a veritable feast of vegetables and tofu dishes that change with the seasons, kind of like a vegetarian kaiseki. This restaurant, located in a house in a quiet residential neighborhood, is overseen by Toshio Tanahashi, a local expert on shojin ryori. Dining is on tatami mats or at a counter with leg wells for those who find it uncomfortable to sit on the ground. Although there are many shojin ryori restaurants in Kyoto, this is probably your best bet in Tokyo.
