The dining room of this hotel enjoys a breathtaking view over Finlayson Inlet, the Strait of Juan de Fuca, and, on a clear day, the Olympic Mountains. The room itself is decorated with a 14-carat gold-leaf ceiling, crystal chandeliers, and a large open-hearth fireplace. As for the food -- well, eating at this award-winning restaurant is definitely a culinary event. Chef Christophe Letard combines West Coast freshness with unmistakably French accents. A recent tasting menu included sautéed spot prawns from Finlayson Arm, steamed halibut pavé, and Cowichan Valley duck breast. Excellent wine pairings, featuring local vintages, and impeccable service help to make meals even more memorable.
