With its groovy artworks and postcard perfect setting, the Matchica resort sets the standard for hipster hideaways. Its onsite restaurant furthers the cause with an eclectic menu that touches on a wide range of world cuisines. Recent winners on the menu have included seared scallops in Jamaican jerk sauce, seared peppercorn beef filet, mango-and-ginger-glazed pork chops, and a warm chocolate soufflé that is one of the best desserts I’ve ever had in Belize. Also on tap: an excellent and extensive wine list. And for those who want to keep on enjoying the finer things in life after dinner, Matachica offers a selection of Cuban cigars and cognacs. Service is very attentive and complimentary boat transfers are provided.
