Don't let the Palm Beach Plaza location fool you—White Modern is unlike anything you'd expect to find at a shopping mall. Chef Urvin Croes left his native Aruba to spend five years in Utretcht at a Michelin-starred restaurant before creating his own contemporary space on the second floor of the mall, with floor-to-ceiling windows and dishes that can't be defined. The interior is a contemporary glass box: Think all-white walls and furniture, with an exposed warehouse-style ceiling, hanging glass orbs, and a slick bar. If you've ever wanted to try something exotic and out of the box, like lionfish ceviche, this is your place. Portions are European-scale (which means tiny), but what they lack in size they make up for in flavor and presentation, incorporating local flowers and homemade sauces. Prices are a tad steep, but not too crazy considering the type of dishes on the menu, which range from veal chop and lamb to a mushroom medley and vegetable napoleon—perfect for those vegetarians out there. While the cuisine teeters toward the upscale side, there's no dress code, so feel free to come as you are.
