Replacing the venerable Bentley’s as the resident eatery and watering hole at the historic Wheeler Opera House, Justice Snow’s is one of the best new restaurants and cocktail bars in the in the West. Named for the local justice of the peace in the late 1800s, the copper-topped bar and rough, ornate woodwork prove a nice backdrop for the inventive fare. The kitchen takes both regional and Mediterranean cues with small plates like chickpea fritters and main courses such as Colorado lamb French dips and grilled Norwegian salmon. But the thick, leather-bound cocktail list with 100-plus offerings organized by liquor, including a bit of history on each drink, is a showstopper, as is the cocktail-making, verging on performance art.
