Meat is sourced exclusively from Umbrian and Tuscan farms, olive oil is 100% Umbrian, and the pasta is made fresh daily; try the tortellini stuffed with pheasant. Menus are seasonal, but in summer secondi might include roast lamb chops with cheese and mushrooms, or rabbit stewed in Montefalco red wine.
