This modern and stylish California-style sushi restaurant is a mainstay on the Beijing restaurant scene for good reason. Hatsune's dozens of inventive, fusion-inspired sushi rolls are delicious. Check out the creatively named "Moto-Roll-Ah" (which has spicy tuna, snow crab, and avocado) and "Pimp My Roll" (a tasty mix of soft-shell crab and avocado). Sushi purists may not approve, but virtually everyone else will love the combination of attentive service, good food, and hip ambiance. This branch in the Sanlitun Village shopping center is glitzier than the original. Enter through a waterfall glass door to two sushi bars and an outdoor terrace. The décor follows an underwater theme, with nice touches like the school of fish sculpture hanging from the ceiling.
