After decades of neglect, the majestic Grand Hôtel was reborn in 2007, with an exquisite interior makeover by decor-maestro Jacques Garcia. Taking inspiration from its neighbor the Grand Théâtre, the lush decoration hints at 19th century theater trimmings, and the unusual color schemes gracefully blend the old and the new. The top-floor spa goes even farther into the past—ancient Rome, to be exact—with red columns, black trim, and a mosaic pool with a ceiling that opens to the sky. The rooftop bar has a terrific view and is a popular nightspot in the warmer months. There is a bistro as well as a gourmet restaurant, Le Pressoir d’Argent, run by Gordon Ramsay.
