The gourmet restaurant in the Grand Hotel now has Gordon Ramsay installed as head chef (or rather overseeing the restaurant from his base in London, with Gilad Peled as full-time head chef in Bordeaux). Named after its rare silver lobster press, this gastronomic palace honors seafood from the Atlantic coast but also the best quality produce from around southwest France, such as the celebrated chicken from Les Landes, organic vegetables from the Pays Basque, and many more, depending on the season.
