This classic little gem is creeping up the foodie destination charts in Bruges and is definitely one for booking ahead of time, partly due to the high quality of the cuisine and partly due to the fact that it’s tiny. Oil paintings cover the walls, chandeliers drip crystal, and the intimate dining room is lit by candlelight at night. Every sitting runs like clockwork, thanks to the hospitality and skills of owner-chef Stefaan Cardinael (one to watch in the future) and maître d’ Caroline Saeys. Menu choice is limited to what is available seasonally and what Cardinael feels like cooking, but the results are always sublime; dishes might include scallops, skate wing, or milk-fed roast lamb. A fine wine list adds to the pleasurable experience.
