The 10-course exceptionally intricate tasting menu at this San Telmo restaurant doesn’t come cheap, but it is among the best dining experiences in the city. Chef Gonzalo Aramburu, who has worked under notable chefs in Spain and France, creates molecular gastronomy with Argentine influences, working with ingredients like local trout, suckling pig, and a filet matched with foams, sorbets, and delicate purees. The neighborhood, at the extreme limits of San Telmo, is a bit dodgy, so take a taxi. And make a reservation—it's a small, intimate space and the tables are often filled weeks in advance.
