You shouldn't leave Cairo without taking a sunset or evening cruise on the Nile in one of these traditional lateen-rigged sailboats. The best place to start your cruise is the docks between the Four Seasons and the Hyatt Regency, which are shared by several companies with two or three boats apiece. There's not much to differentiate the companies, but you may be able to gain a little ground by playing one off the other in the price negotiations. Once onboard, more or less anything goes, so feel free to bring a pizza and some beer for a lovely new perspective on dinner in Cairo. The owner of the dock and the boats are from Cairo, but the pilots are usually from Upper Egypt; they will probably appreciate sharing whatever you have onboard, and are usually good for a chat and a whole new perspective on life in the big city.
