The hippest, most sophisticated restaurant in Cefalù is right in front of the town's famous cathedral, at the bottom of steps that have been trod upon by Norman knights and La Dolce Vita movie stars alike. Many tables sit in the open air on cobblestones, others under the vaulted ceiling of the air-conditioned interior. I think the chefs here top those at La Brace (Michelin's Cefalù favorite): They will enthrall you with their smoked fish, their seafood salads are the town's best (and the ideal food on a hot summer day), and their truly excellent carpaccio of beef will appeal to serious carnivores. Count on freshly made salads and desserts as well.
