 “Hotel Red Hat” is our favorite luxury abode in Dijon for its style and friendly staff. It’s only a 10-min. walk from the train station, too. Most of the rooms in this 19th-century building have had a contemporary makeover; others, notably the Initial and Superior rooms, have a more traditional style. After a hard day’s sightseeing, the sauna, hammam, and hydromassage showers (all free) in the basement spa are a welcome respite, and a small range of treatments for face and body are on the menu. Speaking of menus, the hotel restaurant, overseen by (and named for) William Frachot, is the best in town with two Michelin stars.
