Founded in 1886, Proto is regarded as Dubrovnik’s best fish restaurant—over the decades, it has hosted many well-known visitors, including Edward VIII, former King of England, and his American wife, Wallis Simpson, who ate here in 1938. House specialties include shrimp in saffron sauce; lobster served with truffle and mushroom risotto; and fresh John Dory baked in the oven with potatoes, tomatoes, and zucchini. In winter 2013, the upper level stone terrace was renovated, adding retractable glass, so it’s possible to eat there now even when the weather is chilly. Proto is expensive (reservations are recommended), but you’re guaranteed a memorable meal.
