This Michelin-starred restaurant in the center of Galway City is one of the best, and most fashionable, places to eat in the region. Head chef Ultan Cooke has won as many fans for his passionate slow-food ethos as for his delicious food. Well, almost as many…okay, it’s mainly the food. The menu is tiny but always built around what’s in season and best that day. Oysters might be served with cucumber and arrowgrass (a kind of native wild plant that grows in bogs and by the sea), or monkfish with sea buckthorn and mussels. The only downside: the cost. This is not a cheap night out, but how often are you going to be here? Tip: Tasting menus are less expensive than you might expect from a place this trendy, at €55 (€85 with paired wines). Needless to say, reservations are essential.
