So it is with Trio, started by three chefs from the excellent Snake River Grill. The spinoff has earned its stripes as one of the best upscale restaurants in town. Dishes tend toward well-executed classics such as New York strip steak, halibut, buffalo tenderloin, and wood-fired chicken, plus a selection of pizzas. Locals rave about the waffle fries, topped with bleu cheese fondue and scallions.
