Jinju is a conservative little city and doesn't have an exciting nightlife, but there are plenty of hof-style bars where you can grab beer, or cafes where you can get an overpriced cup of coffee. Most of them are in the downtown area, where the streets are closed off to cars at night, with some isolated action around the universities.
