Try prawns with tomato and ginger; marinated leg of lamb; lamb seasoned with cardamom, mace, and ginger cooked over charcoal; and a range of vegetarian dishes such as tandoor-cooked broccoli in yogurt sauce. Biryanis are a specialty: light, delicately seasoned, and baked in a pastry-sealed pot.
