If you dine at just one bouchon during your stay, make it this one. With its wood-paneled walls and gingham tablecloths, this old-fashioned restaurant is always filled with locals. Hearty meat-based Lyonnaise cuisine is king here: chef Joseph Viola won the Champion de Monde 2009 award for his foie gras and sweetbread pâté en croute (pâté in a pastry case). Viola has been wise enough to add lighter salads and fish dishes too. There’s another outlet at 36 rue Tramassac in Vieux Lyon.
