Fried potatoes smothered in a spicy red paprika-based sauce are a staple in bars all over Spain. This one claims to have invented the dish—known as patatas bravas—and even has a patent on the sauce. At Las Bravas, you can also get a pig’s ear, fried baby squid, chicken wings, and even a whole 6-inch tortilla Española smothered in it. We always grab a ledge on the mirror-covered wall so we can keep track of how much sauce we’ve dripped on ourselves.
