L’Epuisette

This Michelin-starred option is undoubtedly the premier place in Marseille to sample bouillabaisse stew. Bring your appetite: Fresh fish is poached in saffron-infused soup; the final product is served as two separate courses, accompanied by rouille, a mayonnaise-like sauce flavored with garlic, cayenne pepper, and saffron. Or visit during wintertime to sample the restaurant’s exquisite truffle menu, a selection of courses which may feature scallops in truffle sauce, or a truffle-infused chocolate mousse (165€). The setting is as sublime as the cuisine: A seaside dining room overlooks Château d’If from the picturesque fishing port of Vallon des Auffes, 2.5km (1.5 miles) south of Marseille’s Vieux Port.
