Tucked away on the fourth floor of the labyrinthine Fontainebleau, Hakkasan exudes a nightclubby, Vegas vibe with thumping music, and scantily clad diners. Although we’re of the hole-in-the-wall school of Chinese, we can’t deny the fact that this is some seriously good, gourmet food, created by Michelin-starred chef Alan Yau. Signature dishes include a fabulous charcoal grilled honey Chilean sea bass; roasted duck served with crisped skin and a savory soy sauce; and clay pot beef tenderloin with garlic. Service is professional if sometimes aloof. Your best bet is to go with a group of people, especially for a la carte dim sum brunch, so you can share a number of dishes. Just watch the drinks—that’s where they always get you.
