Master French chef Robuchon passed away in 2018, but not before opening a branch of his lauded homage to haute cuisine in a gorgeous Miami Design District setting. Guests ascend a spiral staircase to the second floor and sit at a 34-seat counter where they watch a team of Robuchon proteges prepare what their master taught them—a mind blowing menu of signature creations including caramelized free-range squab with foie gras; organic crispy poached egg with Imperial caviar and smoked salmon; and roasted baby artichoke with chickpea and turmeric cappuccino. All breads are made by the in-house boulanger, and there’s even a burger for those who think the other stuff is too stuffy and it’s worth every penny of the $45 you’ll spend on it, yikes. All of that is available a la carte, though diners can also go for the chef’s tasting menus ($305). Service is exceptional and not at all like that Ralph Fiennes 2022 horror story “The Menu” about people who take their food way too seriously, though the crowd who dine here certainly would fit into that flick. Don’t take it too seriously and just prepare to be wowed.
