NAOE Miami

Simply put, NAOE is Japanese for “OMG omakase.” Okay, not really, but chef Kevin Cory sure makes you think so with his exquisitely prepared, hyperfresh sushi and Japanese fare. Their motto: “It’s not fresh, it’s alive.” This may be the closest Miami gets to Tokyo. NAOE only serves the chef choice menu ($280 plus 20 percent service charge), and those with special requests or dietary requirements, need to inform the restaurant 10 days in advance. Among the items you may find on your plate or in your bento box: smooth egg custard with soft freshwater eel bits; fresh giant clam sashimi in a tangy shiso vinaigrette; in-shell conch; sweet, chilled corn-miso soup; saltwater and freshwater eel; and uni so creamy it’s been known to silence even the pickiest of reviewers. It’s as authentic as it gets here. Be careful about what you ask for, though, as extras can add up quickly; they charge for fresh grated wasabi. You’ll need two to three hours for the experience. Children under 12 are not permitted.
