Umbrian and local dishes are cooked and presented perfectly here, the service is attentive without being annoyingly hovering, and the wine list would make a Michelin-starred restaurant proud. For the daring there's beef in Sagrantino wine, lamb with truffles or snail kebabs -- truffles feature in several dishes and their strangozzi pasta is excellent. Although the outdoor cover charge is a bit steep, the best spot is under the parasols on the terrace -- book ahead or arrive early.
