As one of the only fully vegan restaurants in Central Florida, Ethos garnered such a loyal following it recently moved and expanded. That’s because when vegan cuisine is all that you do (even the cheese qualifies), you have to be skilled at making it taste good, too—and Ethos succeeds. Among the favorites are pecan-encrusted eggplant, pumpkin seed pesto penne pasta, and 10-inch pizzas. Kelly and Laina Shockley, who run it, are assiduous about ingredient sourcing and proudly pay their servers a living wage (not minimum wage). Specials change according to seasonal crops, and there’s always a soup of the day. About a third of the menu is gluten-free.
