Sarasate
This lovely, largely midday restaurant is an anomaly in Spain in general and in meat-loving Navarra especially. Except during the San Fermín festival, when they revert to carnivore ways to satisfy the hordes, Sarasate is strictly vegetarian and has been since 1979. The menus are pretty limited, featuring the usual suspects like creamy rice with mushrooms, a strudel of spinach and feta cheese, and roasted green peppers stuffed with tofu and mixed vegetables. Most dishes are gluten-free and several are vegan. All meals are fixed-price, with fruit juices extra.
