Poolside in Hotel Aguas Claras, the jungle chic Papaya has one of the best all-around menus in this corner of the Caribbean. They hired noted Panamanian chef Andres Morataya to re-imagine the dishes with a mix of Pan-Latin and Afro-Caribbean roots, so you can find seasonal items like tiradito with passion fruit sauce and mini-Caribbean-style patis, or turnovers. There’s also a good selection of beachy cocktails and mocktails. On some nights DJs are in the house. Breakfast and lunch menus tend to be lighter than the dinner offerings.
