Mavrikos is where royalty and celebs come to dine when in the area. Whether they should or not is now an open question, as many feel the restaurant is resting on its laurels (which include many awards over the years). We've had excellent meals when there, and must point out that the food is generally more ambitious and complex than you'll find in other area restaurants, using only the best local produce, but in unusual ways. Easy to find on the main square opposite the big tree at the entrance to town, you'll need reservations to dine at Mavrikos in high season.  To try a selection of meze with wine, expect to spend double the usual 15€ per person, but we'd say it's worth it.
