Chef Antonio Vitale is the current maestro, his seasonal, contemporary menus utilizing fresh produce and riffing on traditional Roman dishes. Starters such as zucchini blossoms stuffed with buffalo mozzarella, burrata cheese, and salmon roe are classic. The pasta with potatoes, tomatoes, and pork cheek adds some of his Neapolitan hometown flavor.
