Todd Martin started the tamale company in 2008 after learning how to make them by hand from his girlfriend's (now wife's) family, and the restaurant, which has only two locations, still retains its local flavor. Adventurous eaters can choose from crazy menu items, such as the "dogmale," made with a hot dog, bacon, onions, and green chile. Traditionalists love the delicious green corn tamale, available in season (usually May through October). If you can't get enough of the corn-husk-wrapped goodness, don't despair. Some tamales are available for mail order, shipped frozen to the continental U.S.
