A standout among the bargain restaurants along Rúa Mayor, this chef-driven restaurant surprises at every turn with imaginative takes on traditional cuisine. As the name suggests, the menu is built on a foundation of air-dried mountain ham (the BEHAR brand of jamón ibérico), but it shows up in interesting ways, like the powdered ham sprinkled on a hamburger or used to add umami depth to a plate of roasted hake. Naturally, pieces of ham flavor most of the soups and soup-like rice or lentil dishes. The daily midday menu offers a broad range of choices for all three courses and the house wine (you get a choice of beverage) is inordinately good. The dining room is very casual, and in good weather many patrons elect to eat at the tables on the street for an extra euro or two per person.
