The bar in the historic Hotel St. Francis is a not-so-secret destination for an expertly made craft cocktail. Head bartender Chris Mulligan takes his drink science so seriously he has his own cocktail blog. The staff here uses local herbs, fruits, and spirits in many of the concoctions, like the signature Spicy Secreto, a combination of cachaça liquor, elderflower liqueur, cucumber, lime juice, and jalapeño. Of all the drinks, my favorite is probably the Smoked Sage Margarita, especially on the outdoor patio. Inside, wooden-cross light fixtures provide a faux-rustic vibe. Guests can order food from the hotel restaurant Tabla de Los Santos—try the baked goat cheese or the roasted-corn green-chile chicken chowder. The service can sometimes be somewhat indifferent, so don't plan to be anywhere else in a hurry.
