For such a tiny place, Santillana del Mar has a lot of classy lodging, and this old manor house converted to a hotel is a terrific alternative to the two paradors (below). The foundations of the manor date from the 11th century when this was a convent town. Exposed stone walls emphasize the antiquity of the structure; ceiling beams and broad wooden floors add to the effect. The staircase was carved in one piece from a 700-year-old oak tree when this version of the house was built in the 1440s. Guest rooms are comfortably furnished with rustic-looking furniture. The house is surrounded by lush gardens.
