This glamorous hotel (named after the late chef who created it and part of a gastronomic empire with restaurants in Beaune, Dijon and Besançon) is home to one of France’s greatest restaurants, La Côte d’Or. Today, its Michelin-two-star cuisine is overseen by Louis-Philippe Vigilant, who inherited the reigns from Patrick Bertron, Loiseau’s previous side-kick, and the restaurant’s chef for over 40 years. The decor throughout is “rustic luxury” with wooden beams and Burgundy-tile floors. The standard or “confort” rooms are spacious and good value and even have their own balconies.
