Cinco Jotas

Almost every bar in Sevilla serves good jamón Ibérico—and it’s always pricey—but you won’t find better than this. Spain’s finest ham comes from Jabugo, 100km (62 miles) north of Sevilla, where free-range pata negra pigs feed on acorns in the surrounding meadows. Cinco Jotas (5J) signifies the best of the best. The contemporary bar and restaurant fill up fast—especially when there’s a bullfight at the Maestranza nearby—so reservations are recommended. The expertly carved and intensely flavored ham, married with sherries from the Osborne group who own the brand, is one of Andalucía’s great pleasures. The grilled Ibérico meats, pink in the middle, are a treat too.
