Los Coloniales
This traditional taberna near Las Setas has an outdoor hatch, a busy bar, and a backroom comedor, or dining room. Every couple of minutes, eye-catching dishes are rushed from the kitchen while the bar staff engages in non-stop banter. Order a drink and watch the performance for a while, then make your choice. The chorizo sausage topped with quail’s eggs, and crunchy eggplant with honey are popular, but we’d go for the solomillo al whisky every time. The tender pork loin, stewed in whiskey and served with fried potatoes and glassy pieces of whole garlic, is simply superb. A larger sister branch near the bullring (Calle Fernández y González 38) operates a similar formula.
