The Fond Doux resort has not one but two excellent restaurants serving home-style plantation food built around the bounty of the Fond Doux soil. Nestled in a tropical garden, Jardin Cacao is open for lunch and dinner (reservations recommended), and the menu changes around what is fresh and seasonal during your visit. It may feature a heady carrot and pumpkin soup, mango-tomato salad, Lamontagne's Sous Kaye (octopus and conch in a pepper, onion, and garlic broth), pan-fried mahi-mahi topped with a fruity salsa, or snapper cooked with lemongrass. Frozen tropical drinks come voluptuously garnished with tropical orchids. It's a charming spot, all hardwood floors and bamboo timbers, enveloped in rainforest trees and birdsong.
