The Huntsman

People in northern parts of Florida love to hunt, and this restaurant pays homage to that culture with a focus on wild game and “field and stream to table” cuisine. It’s a buttoned up, upper crusty, conservative haven for meat eaters, but it also has a younger, dare we say more liberal late night cocktail scene from 9 to 11pm on weeknights, midnight on weekends. Despite the emphasis on game, vegetarians aren’t ignored here—the chili crush cauliflower appetizer tossed in sweet and spicy citrus glaze is delicious, as is the crispy eggplant with pearl onion agrodolce (sweet & sour). But about the game. Mains include boar and rabbit cacciatore, grilled Texas antelope, and cauliflower katsu curry. Those with even bigger game can choose to do the Hunter menu, featuring a chef’s selection of wood-fired carnivorous dishes, or the Gatherer menu featuring seasonal vegan fare. Both are $95. This  place definitely got game.
