Named after brothers and owners Asaf and Yotam Doktor, this tiny, revelatory restaurant on a busy main street is easy to miss if you’re not looking for it. It’s a culinary lab as much as an eatery, where the owners experiment with purely local ingredients, including specialty alcohols (for unique cocktails), and ice creams churned from the house-fermented butter or from the Israeli "Gili" corn. Even more experimental dishes have included (in the recent past) bresaola buried in ash around a month before being served, and charcoal grilled sardines wrapped in fresh vine leaves and topped with green almond salsa. This restaurant's second greatest achievement is that, despite the parade of rave reviews, the vibe, staff and clientele are still wholly down to earth. Located amid a row of unpretentious, artisan-focused restaurants and shops on Ibn Gvirol Street, Dok has an understated ambience and a surprisingly tiny size, with a bar, a few tables inside, and a few more street side (the bathroom is off-site). The Doktors also own the enormously popular "Ha'achim" (The Brothers) restaurant down the road.
