At Volterra's best restaurant, you’ll have a choice of surroundings: the elegant, high-ceilinged dining room, a bottle-lined enoteca, or a pretty patio out back. Wherever you choose to enjoy them, the offerings are innovative and refined takes on Tuscan classics. All the salamis and cheeses are from local producers, lavagnette (homemade egg pasta) comes with a sauce of celery and pecorino pesto, and local beef is grilled to perfection. Some of the wines come from the owners’ vineyards.
